Gluten Free Dark Chocolate Pie
This pie calls me with it's dark chocolate filling! It's poured into the gluten free pretzel pie crust that has coconut and almonds. Sound familiar? Like the popular candy bar that has a coconut filling with an almond on top and milk chocolate poured over it. We all know which one I'm referring to but this pie has the benefits of dark chocolate and is kissed with coffee. How can you go wrong? Dark chocolate and coffee!
In a previous blog, I posted how to make the gluten free / vegan pretzel pie shell. Once chilled, it's begging to have a delicious filling. To satisfy my chocolate craving today, I made a dark chocolate and coffee pie filling. ALL GLUTEN FREE - oh boy, it's so good.
I saw the base of this recipe in a magazine. I needed to put my own twist on it and of course add coffee since it complements the dark chocolate. I changed the pie crust by adding ingredients and deleting others. Recipes are a guide and not written in stone. If you don't like something or feel an ingredient will work better, by all means try it. Yes, even this Domestic Goddess admits to recipe fails. Those that did not work, I laugh and say in my best Southern accent (I have no idea why) "well thank you for coming, but you are NOT going to make a repeat performance." My dog Jersey looks around like "who the hell is she talking to?" All good in your kitchen, you can talk to whomever you wish and make what ever you want.
Let's get baking, you'll need:
Gluten Free / Vegan Pretzel Pie Crust (cooled)
2 cups coconut milk (not water, MILK)
12 oz. dark chocolate chips
4 tbsp unsweetened coco powder
1 tsp instant espresso power or instant coffee
1/4 tsp fine salt
Sprinkles to decorate
In a sauce pot, heat the coconut milk until small bubbles form around the rim, Do not bring this to a full boil coconut milk can scald and have a bitter taste. Once you see the bubbles, add the coco powder, coffee and salt. Stir until mixed well. Continue stirring and add the dark chocolate chips. You can use dark chocolate bars but I found the chips melt evenly.
Pour into your pretzel pie crust and decorate with sprinkles. Those that know me, know I have an addiction to sprinkles! Some collect jewelry, I collect sprinkles. I think my sister Julie was surprised when I opened my cabinets and showed her my collection. Every season has a special sprinkle that I use to decorate goodies. I think this is a great addiction to have. Make your food sparkle with sprinkles!
Put the pie in the refrigerator to set up for at least 2 hours before slicing. The trick to slicing a perfect pie is to slice three slices then remove the center one. PERFECT first slice and you keep the pie looking beautiful. Refrigerate left overs.
