Funny name for a fabulous cookie! A sugar cookie enhanced with fresh cranberries, dried cranberries, white chocolate chips and a touch of warm spices. An orange drizzle brings all the Fall flavors together in one cookie.
This was my daughter Nikki's creation that we made for her "friendsgiving". Since it's the last day of November, I wanted to get one last chance to use my pumpkin pie spice and cranberries for this year. This is a very easy cookie to make since we'll start with a Betty Crocker Sugar Cookie Mix. Yuppers, a mix! Let's make our busy lives as uncomplicated as we can but still shine like a superstar. The pop of the fresh cranberries are a nice contrast to the chewy dried cranberries. It's all about texture my friends and the white chocolate chips provide a kiss of sweetness.
Let's get baking you'll need: Bake: 375 degrees 23 mins
1 package Betty Crocker Sugar Cookie Mix
1 stick of butter
1 egg
1/2 cup fresh cranberries
1/4 cup Ocean Spray Dried Cranberries or Cranraisins
1/4 cup white chocolate chips
1 tsp pumpkin pie spice
1/4 tsp all spice
1/4 tsp cinnamon
Glaze:
1 orange-juiced
2 tbsp orange zest
1 cup powdered sugar
In a large bowl, prepare the cookie mix as directed. Betty Crocker Sugar Cookie Mix is a great blank canvas to make a number of things. This mix makes a crust for mini pies just by adding a few additional tablespoons of flour. Easy and quick without the fuss.
Once you have the dough prepared, add your spices. You'll have to mix this stiff dough with your hands to make sure you get all the spices blended properly. No worries, sugar is a natural exfoliant and your hands will look younger after you make these cookies.
Add the cranberries and chocolate chips to the dough and gently mix. If you mix too vigorously your fresh cranberries will pop and turn your dough a weird color. Yes, I speak from experience on this one.
Use a small scoop and drop the cookies onto a cookie sheet.
Bake 23 minutes and don't let the cookie turn golden brown. By taking them out of the oven a littler earlier, it gives the cookies that chewing and tender texture that we all love.
Combine the ingredients for the glaze and drizzle on top of the cookies. I like to garnish with a little extra orange zest so that you have a beautiful presentation and the aroma is so inviting.
