Caprese Salad


This colorful salad is my way of telling my family that my garden is in full bloom and ready to go. My tomatoes start to turn red around this time and will continue thru September. I'm obsessed with growing fresh basil and tomatoes just so I make this salad.

This salad is easy and great to bring to your July 4th BBQ (put it on ice if you're keeping it outside).

This salad is made with cow's whole milk mozzarella, fresh basil, perfectly red tomatoes and a drizzle of olive oil. We enjoy this with French Bread and a chilled glass of Chianti wine. I could eat this as my meal and be extremely happy.

You can make this your own by using grape tomatoes, cube the mozzarella small (or use mozzarella balls) and put them on skewers. This would be adorable as an appetizer for your next party.

Be creative and make your salads colorful and your guests will applaud your creativity.
