Quick Bacon Quiche


With the hot days of Summer upon us, no one wants to spend the day in the kitchen preparing a meal. This is a cheesy bacon quiche that takes less then 30 minutes to make. My goal is to introduce this generation to Bisquick and the amazing things you can do with it.

Bisquick is a baking mix consisting of flour, shortening, salt, and baking powder. You can also find it gluten free and it tastes the same as the original. I tend to buy the "Heart Healthy" version of Bisquick and always feel a little better using this as a cheat for my recipes.

According to General Mills, Bisquick was invented in 1930, but I feel it was most popular in the 1960's. That was the era of convenience where the housewife had to prepare meals fast for her family. Canned food was big and organic was a thing of the future. Remember, microwaves didn't exist so everything took so long to cook. If you were well behaved during the week, on Friday night's you could sit in front of the TV and eat a TV frozen dinner on a snack table, while Mutual of Omaha's Wild Kingdom was on the television. Or so I hear, I'm too young to remember that..... (haha)

Humor me as I take this week to share quick and easy meals that you can make fast with Bisquick. This recipe is a suggestion and you can add or subtract what ever you like. Make this your own and use things your family likes. If they like pepperoni, make it a pepperoni quiche. You may want to call it a unique name since quiche seems to intimidate some.

Let's get baking you'll need: 9" pie plate Oven: 400 degrees 23-25 mins.

1 onion - chopped fine

1 lb of bacon (fried crisp)

1 clove of garlic

4 eggs

1 cup of heavy cream

1 cup of whole milk

1 cup of Bisquick

1 cup of frozen peas

1 block of white cheddar cheese- shredded

In a large pot, fry the bacon and set aside. Don't throw that golden bacon grease out, you're going to fry your onions in that. I never said this was healthy recipe and you can keep your cardiologist on standby if needed. Add the garlic and cook for few more minutes. Allow this mixture to cool.

In a large bowl mix, the milk, cream and eggs. Gradually add the Bisquick and stir just until it's incorporated into the egg mixture. Do not over mix.

Spray a 9" pie plate with baking spray and put the bacon, onions and cheese (save a handful to put on top) in the bottom. Pour the egg mixture over the top. (I suggest you put the pie plate on a lined baking sheet in case it over flows). The oven is where the magic happens! The Bisquick sinks to the bottom during baking and makes a crust.

You can use more or less of the cheese or use a mixture of cheeses. I tend to put a lot of cheese and make it extra gooey. In my world there's no such thing as too much cheese. No worries, you can serve the quiche with a lovely green salad to make up for the cheese.

Bake for 23-25 mins on 400 degrees (top will start to get golden) - when there's 5 mins left on the baking time, sprinkle the remaining cheese over the top. Return to the oven until it's golden brown.

This is paired well with Lemoncello Liquor to help cut the richness of the quiche. Always serve the Lemoncello ice cold in a cordial glass. Yes, I just combined France (quiche) and Italy (Lemoncello) in one recipe. You can make all kinds of fun mashups and let your kitchen be your blank canvas for new creations.

I don't know if I should say "Bon Appetite" or "Mangnia"!!!
