Bouncing Bubbles (Jell-o)


Isn't this a fun way to have Jell-o? I'm always trying to re-create old recipes and add a new twist them. A martini glass was the perfect vessel to display all the bubbles.

When I think of lime Jell-o, there's a part of me that shivers and remembers being sick. For some reason, sickness equals Jell-o in my mind. I needed to burst that bubble and create a fun, new way to have lime Jell-o.

This recipe would be amazing topped with a drizzle of Creme de Mint Liquor. Since it was early in the morning and I needed to do more research for this blog, I decided to keep this delightful alcohol free.

Listed on jellogallery.org, they stated: "In 1897, Pearle Wait, a carpenter in LeRoy, was putting up a cough remedy and laxative tea in his home. He experimented with gelatine and came up with a fruit flavored dessert which his wife, May, named Jell-O. He tried to market his product but he lacked the capital and the experience. In 1899 he sold the trademark to a fellow townsman for the sum of $450." Could you imagine being a family member of LeRoy? This product made millions of dollars since the 1897 invention.

I have to include the "Jell-o Trivia" that they have on their webiste: " JELL-O TRIVA January 6, 1925, Jell-O was issued a patent for a sugarless gelatin dessert known as D-Zerta. March 17, 1993, technicians at St. Jerome hospital in Batavia tested a bowl of lime Jell-O with an EEG machine and confirm the earlier testing by Dr. Adrian Upton that a bowl of wiggly Jell-O has brain waves identical to those of adult men and women." Very sad to think that someone's EEG is equal to a bowl of Jell-o. Somehow, I think we all know people like that!

On that happy note, let's get cooking, you'll need:

1 pack of Lime Jell-o (I used sugar free)

1 cup of boiling water

1 cup of Polar Cranberry Lime Seltzer or plain Seltzer

Assorted melon balls - watermelon, cantaloupe and honey dew

4 tbsp room temp Cool Whip

Prepare Jell-o according to the package and put in the refrigerator for approx. 45 minutes or until the Jell-o starts to set. Remove from the refrigerator and stir with a spoon. Reserve 1/3 of Jell-o and set aside. Gently spoon the semi-set Jell-o into a glass. Arrange the melon balls to look like floating bubbles in the glass.

Take the reserved Jell-o and add the Cool Whip. Whip with the mixer on high until you get a light and frothy green topping. Gently spoon over the Jell-o, making sure not to touch the side of the glass.

Return to the refrigerator for 2 hours before serving. You can top with a drizzle of mint liquor, mint leaves (pictured) or shaved chocolate.

No matter how you top this Jell-o, it's a fun and refreshing dessert.
