Midsummer's Night Treat


We are halfway done with Summer and you're counting the days until school begins. This quick, fun and easy to make dessert is perfect for the kids to make on a rainy day or if you need a little me time. Anyone who knows me, knows that I adorable sprinkles and try to include them in a recipe when ever possible.

This 3 ingredient recipe is from my "Me Too Cookbook". When my daughter was a little one, she always wanted to help me in the kitchen. She would stand next to me and yell, "Mommy, me too - me too!" So I would take out empty plastic bowls, wooden spoons and let her cook also. This didn't last long when she realized her bowls were empty. That's when I started to figure out recipes that little fingers can make and be proud of their accomplishments. I also found that if she made the food, she would eat it without a fuss.

When she got older, we purchased for her an Easy Bake Oven and she was able to create her own surprises without Mommy's help. That's when I knew that my husband was a GREAT DAD! He would tell her how wonderful her baking was as he gagged down burnt or half baked items. Many years later, she is a very talented baker and has mastered gluten free cooking.

Let's get the little ones going, you'll need:

Graham Crackers

Cool Whip Topping

Sprinkles

Break the graham crackers in half (you may need to help them to make them even or let the kids do it themselves and applaud how creative they broke them). I like to say, nothing is perfect in my kitchen, but it sure tastes good.

Spread the Cool Whip Topping, in a thick layer, over the grahams. Gently (don't squeeze the topping out) roll them in sprinkles of your choice. Lay them on wax paper or parchment paper and freeze for at least an hour.

Variations on this can be: 1) chocolate covered graham crackers 2) a thin layer of peanut butter on the grahams before the whipped topping is added. I would roll them in chocolate sprinkles. Who doesn't like chocolate and peanut butter?

To make an adult friendly version I would make a Lemoncello (liquor) drizzle for the of the grahams and use lemon pudding instead of Cool Whip Topping. Adding a few pieces of candied lemon rind and a pipette of Lemoncello sticking out of the top of graham, would bring be delightful. Pictured below are the ones that I purchased from Amazon.com and they held the right amount of liquor.

This is the perfect dessert to encourage the kids to be in the kitchen and help. I've learned to purchase, on clearance, after the holidays, the plastic tablecloths. They make perfect "drop cloths" when the kids are in the kitchen.

William Shakespeare may not appreciate me using this title for a food blog, but I thought it would be a fun way to say - it's mid-Summer. August 1st is around the corner and that starts the countdown for school.
