Last Minute Holiday Cookies


Last minute guest drop in? No problem, here are a few items you can keep on hand and make these adorable holiday cookies in no time. It's doesn't always have to be homemade, just home baked. You want your house to fill with that aroma of cookies baking in the oven and a warm welcoming fire in the fireplace.

One of my favorite shortcuts to keep in the refrigerator is Pillsbury Sugar Cookies (they are cut into circles and ready to go). I can bake them off in 8-10 minutes and then add my personal touch to them.

They also come in chocolate chip cookies, but I can't seem to keep them in the house. My hubby sees them and decides that and a glass of milk makes a wonderful late night snack.

Pillsbury is my secret "go to" when I'm in a pinch or stressed out from the holidays. We all have so much to do and deserve to take a short cut when possible. Yes, the baking queen is promoting store bought, pre-cut cookies. I look at it this way, if I can save time baking, it gives me more time to enjoy a glass of holiday cheer!

Once baked, according to directions and cooled the fun begins. I filled these cookies with chocolate fudge frosting. You can also use a jam, or Nutella or peanut butter. (Do not over fill your cookies or they will ooze out the sides. I like to put a dollop in the center of the cookie.) You may need to put the container in the microwave for 30 seconds or until the frosting/peanut butter is dipable (yes I made up my own word).

Add another cookie on top to make a sandwich. Hold on an angle and dip (hence: dipable) in the frosting and scrap off the extra frosting.

I put the frosting in the microwave for 30 seconds and stirred it when it came out. The frosting was loose and I was able to dip the cookie in it on an angle.

Have a small bowl of sprinkles and put the frosted end of the cookie in the sprinkles. Make sure you cover all the frosting and shake off the excess.

You now have beautiful cookies that will look amazing on your holiday table and it will be our secret that it took 15 minutes to make and that includes the baking time!

Our goal is a stress free holiday that we can enjoy with our family and friends. Here's the best news, your in-laws can't make condescending comments if their mouth is filled with these yummy cookies. That is worth the 15 minutes it took to make the cookies!
