Chocolate Snow Balls


I heard that you can make cookies out of cake mix, I didn't believe it, until today. Short on time, I wanted to try a chewy but very rich in flavor chocolate cookie. All my recipes called for the dough to rest for 2-3 hours, which I didn't have. Then I remembered that I saw on Food Network how to make cookies out of cake mix. I thought, why not, let's try.

These chocolate snow balls were EXTREMELY easy to make and satisfied the chocolate monster deep within. Four ingredients make these fall under the extremely easy category.

Let's get baking you'll need: bake 375 degrees 10-12 mins

1 Devil's Food Cake Mix

1/2 cup vegetable oil

1 egg

1/2 cup powdered sugar

Put the cake mix in a bowl, add the vegetable oil and egg and mix until it form a sticky wet dough. Scoop (I use a small cookie scoop so they're the same size) and roll into a ball. Drop the ball into the powdered sugar and roll all around. Place them 2 inches apart on a cookie sheet and bake for 10-12 mins.

That's it! You just made delicious chocolate cookies.

Then my imagination went wild and I thought, could I combine my favorite fruit cake and a cake mix? Why yes I can and the cookies were so good.

You'll need:

1 vanilla cake mix

1/2 dried candied fruit

1/2 cup vegetable oil

1 egg

1/2 cup powdered sugar

Cherries

Same directions as above except you're adding the candied fruit to the dough before you roll it in the powdered sugar.

I topped the cookies off with a candied cherry. They are chewy and sweet at the same time with that familiar vanilla cake taste. This will blow your mind!

The vanilla cake mix can be a blank canvas for any flavors or additions you'd like to add. Just think of the chopped candy canes and chocolate chips in a cookie.
