Pantry Cherry Pockets


Looking to make something with the kids for Mother's Day? You probably have all the ingredients to make these fast and yummy cherry pockets in your pantry.

This is perfect to let the kids make something special for Mom and not destroy her kitchen. The last thing we want as Moms, is to have our kitchens messy and to find mystery stickiness on the counters.

I had a can of cherry pie filling, but you can use what ever fruit filling you have on hand. If you use apple, I would use a cinnamon powdered sugar glaze. Lemon pie filling would be fun with a Lemoncello glaze.

Look in the pantry for:

1 can of pie filling

1 box of pie crust (prepare as directed on the box)

or

1 refrigerated pie crust.

Cut the pie crust into the shape desired. Add a small amount of pie filling in the center and close the edges with a little water. Use a fork and pierce the edges to ensure the fillings doesn't leak out.

Bake at 400 degrees for 10-12 minutes or until the pockets just start to turn a little brown on the edges. Be careful, the edges will burn before the center is baked.

I always bake my pockets on parchment paper to ensure that they don't stick to the cookie sheets. Allow them to cool completely before you remove them.

They are fragile and flaky and will fall apart if you're not gentle with them.

Transfer to a dish and drizzle your chocolate or glaze on them. I like to serve with addition pie filling and whipped cream.

A port wine would be super yummy with these cherry pockets.
