Chicken Florentine


Looking for a 15-minute dinner? This is for you! I joke not, it took me 15 minutes to make this dinner and that included the preparation. The secret is a good non-stick pan that screaming hot.


If you're following a plan, this is 6 points (on Green), which translates to low fat and high protein.


Let's get cooking you'll need:


4 grilled chicken breasts (split skinless breasts in half)

2 tbsp olive oil

1/4 cup grape tomatoes

2 cloves of garlic (more if you're Italian)

1/4 cup sliced mushrooms

1/4 cup raw baby spinach

1/4 cup fat free mozzarella


In a very hot pan, blister the tomatoes. That means to allow them to brown and start to smoke but don't burn them. Remove from the pan and set aside.


Add the olive oil, to the same pan and brown the mushrooms. Don't crowd the mushrooms - they need room to breathe and do their thing! Actually, if you overcrowd the pan, they will steam and not brown. It was more fun saying, "let them do their thing".


How you grill the chicken is up to you. I used an indoor grill pan but by all means, if you want to grill the chicken outside on the BBQ that's great. DO NOT DRY OUT THE CHICKEN - no one wants to eat cardboard. Chicken is cooked when the internal temperature reaches 160 degrees. Take it off the grill when it's 140 degrees to allow for carry-over cooking.


This is the last step, wilt the spinach. Again, an odd term, I know. It just means, in the hot pan (same pan you cooked the mushrooms in) add the fresh spinach. Stir it until it softens but still holds it's shape. (probably will take about 15 seconds).


Assembly time - chicken goes down first, then the mushrooms and tomatoes are arranged around the plate. Wilted spinach is placed on top of the mushrooms and topped with the cheese. The heat from the hot spinach will melt the cheese.


Poof, you're done. This will be our secret that it was fast and easy. Tell everyone you worked in the kitchen all day to make this delicious meal.


Variations: - this works great with salmon or any fish. Shrimp would be awesome.
