Chicken Waldorf Salad (low calorie)


This is a fun way to use leftover chicken breast and salad from last night's dinner. This satisfies my sweet tooth, naturally, and adds a fun texture to this old classic salad.


A Waldorf salad is a fruit and nut salad generally made of celery, fresh apples, walnuts, and grapes, dressed in mayonnaise, and traditionally served on a bed of lettuce as an appetizer or a light meal. The apples, celery, and grapes can all be green, which harmonizes the color palette of the dish.


I like to roast the apples with cinnamon and a drizzle of date syrup. Another way I varied from the original recipe was to add 1/8c dried cranberries and 6 pieces of dried pineapple, minced small. I think you'll be surprised how easy this was to make and how delicious it is.


Let's get started you'll need:


1 chicken breast, roasted and chopped into small pieces

1 stalk of celery chopped fine

1/8 of an onion grated

1/4 cucumber grated

4 green grapes chopped

1/8c dried cranberries

6 small pieces of dried pineapple (equals 1/4c)

1/2 Granny Smith apple roasted with date syrup and cinnamon (optional, you can use fresh apple)

1/8 c chopped walnuts

4 Mission Zero Net Carbs Sundried Tomato Basil tortilla (can be plain)

1 cup chopped salad (lettuce, carrots, cabbage, etc)

2 hard-boiled eggs chopped

1 tbsp lite mayo

4 tbsp Greek Yogurt (you can use all mayo but I'm saving calories)

1 tsp lemon zest

1/4 tsp dried basil

Generous amount of salt-free everything bagel seasonings



Cut the Mission tortilla into wedges and lightly spray with Pam. Put in the air fryer until crispy (about 8 mins). Do this in a single layer so they get super crunchy. Set aside and allow to cool.




Chop all ingredients about the same size and combine in a large bowl. Add the mayo, Greek yogurt, lemon zest, and basil, and sprinkle the bagel seasoning on top.


This makes 4 servings, approximately 174 calories per serving for 26.5 grams of protein. That works for me!
