GF Cranberry Bliss Bars- Dupe
This time of year, the famous coffee place that starts with an "S" sells my favorite sweet treat: cranberry bliss bars. They are a little sweet and a little bit tart, and they are the perfect size to have with an espresso.
For years, I wanted to make these bars gluten-free for my daughter. Today was the day I challenged myself, and I must say, they turned out awesome!
Here's the recipe: 350 degrees 35-40 mins
1 cup softened butter
1 1/2 cup brown sugar
1 tsp orange zest
1/2 tsp vanilla
1/2 tsp ginger
1 tsp baking powder
1 tsp salt
1 cup almond flour
1 cup gluten-free flour
1 cup white chocolate chips
3/4 cup of dried cranberries
You will need a mixer (stand or hand) to whip the eggs and butter together. Slowly add the eggs (one at a time) and the vanilla. Fold in the orange zest. SIFT the dry ingredients together. They must be sifted. If you don't sift, you will have dense and nasty bars.
Lastly, fold in the chocolate chips and the cranberries. Pour into a 13 x 9 greased baking dish.
Bake for 30-35 mins or until a knife comes out clean. Allow to cool completely.
Let's make the glaze:
8 oz cream cheese
1 1/2 cup powdered sugar
1/2 tsp orange zest
1/2 tsp vanilla
1/3 cup dried cranberries
Drizzle of white chocolate on top
Note: The batter will be thick and loaded with dried cranberries and white chocolate chips.
