Gluten Free Orange Cranberry Scones
Do you have leftover fresh cranberries from Thanksgiving? This is an easy and quick recipe to make scones. They are not perfect, but for GF they are delicious!

I love anything Scottish! Funny little side story, when I first saw my now hubby in 1977, I thought he was Scottish! The Bay City Rollers was a Scottish band that I was very fond of. (don't laugh, I was 16yrs old). I gave him my phone number and told him to call me some time (in my best Mae West voice). He did, and the rest is history!
Let's get baking, you'll need:
400 degrees 22-25 mins.
2 cups gluten-free flour
1/2 cup sugar
2 1/2 tsp baking powder
2 tbsp orange zest
1/2 cup FROZEN shredded butter
1/2 cup heavy cream
1 egg (beaten)
1 tsp vanilla
1/2 cup fresh FROZEN cranberries.
Add all the dry ingredients in a large bowl including the orange zest. Cut the frozen butter into the flour. Add the heavy cream, egg, and vanilla. The frozen cranberries are folded in last.
Turn onto a floured board and gently bring everything together until it forms a dough. I tried to make a triangle shape but they had a mind of their own. Doesn't make a difference in the shape, as long as they taste great. No mistakes in our kitchen, just happy accidents!
Bake until brown.
GLAZE
1/2 cup powdered sugar
1 tbsp orange zest
juice of 1 orange
