Thanksgiving Take 2


The best part of hosting Thanksgiving dinner is the leftovers the next day. Black Friday maybe known for shopping, but in my house it means "used food". That's what my hubby calls leftovers, used food because we've already had dinner from my cook-a-thon. The only time he doesn't mind used food is the day after Thanksgiving. We look forward to crisping the stuffing on a non-stick fry pan and heating the sliced turkey in the gravy for a sandwich. The mashed potatoes may turn into dumplings, potato pancakes, or just heated with extra butter. (everything is better with butter, right?)


The desserts follow the used food and are presented in a new way. The apple pie is heated and served with a slice of sharp cheddar cheese. Chocolate mousse and cheesecake filling will be combined to create a yummy layer for a trifle with fresh berries and leftover cookies. I'll take a small amount of this yummy filling and freeze it in small containers. That way I can pull it out of the freezer and use it for individual desserts.


The leftover wine/alcohol, OH WAIT, there was none! We opened a great bottle of wine and had to finish it in front of the fireplace last night and count our blessings. This year we were so thankful for our one-year-old granddaughter, who loved my cooking. I think the apple pie was her favorite.


I'll become a great barista and use the eggnog to make homemade eggnog lattes during the week. Note, don't try the almond milk holiday nog. One word comes to mind, YUCK!
