Frannie-Babe's Gluten Free Dressing
This is my mother-in-law, Frannie-Babe's famous stuffing. I had to alter it since my daughter is gluten free but all the originals tastes are there. She would make this every year for Thanksgiving and it was so good.
It's simple and fast to make and re-heats beautifully.
Let's get cooking you'll need: Bake 350 degrees approx 20mins
1 lb turkey bacon
2 loaves of gluten free bread
4 tbsp butter
1/2 (or less) of turkey stock
2 cloves of chopped garlic
2 apples chopped small
1/2 small onion chopped
1 stalk of celery chopped
4 tbsp chopped fresh parsley
In a pan, cook turkey bacon until it is crisp (not burnt) and set it aside. The smell of the turkey bacon cooked, somehow, makes everyone in the house run to the kitchen. Then, quality control sampling happens, so make extra! In the same pan, add the butter and saute the onion, celery and garlic until they just start to soften.
In a large bowl, cut the bread into cubes. Add the apples and the onion mixture. Here's the fun part, the only way I know how to describe this to you, is to squish the mixture together with your hands. Slowly add the liquid. Your goal is for the stuffing to just hold together when you form a ball but not wet. Add salt and pepper to taste.
Add the bacon last. Form into large balls and put in a shallow roasting pan. Top with chopped parsley for garnish. The stuffing is crispy on outside and soft and delicious inside. I always make extra because it never lasts long in the refrigerator. I've been known to eat this with eggs sunny side up and toast for breakfast!
It's all about the side dishes or supporting characters. This stuffing is so good, it's a STAR in it's own right.
